Matoke Bananas – Savoury, Starchy & Uniquely Versatile

Our Matoke bananas from Uganda are a must-try for exotic fruit lovers seeking something truly authentic and flavourful. These short, plump green bananas are harvested before ripening, making them ideal for cooking.

Matoke are traditionally steamed, boiled, or roasted, where their dense, starchy flesh softens to a tender texture with a subtle tang. This distinctive taste is the foundation of many savoury East African dishes; most famously the national dish of Uganda and Rwanda, where Matoke is steam-cooked and mashed to perfection.

Though best known as a savoury cooking banana, Matoke Bananas can also be enjoyed as a dessert banana once fully ripe. When the skin turns a deep yellow, the flavour transforms, rich, sweet, and creamy, perfect for banana bread, porridge toppings, smoothies, or simply eaten out of hand.

Nutritionally, Matoke bananas are a wholesome source of dietary fibre and plant-based protein, making them as nourishing as they are versatile.

Explore the delicious dual nature of Matoke; green and savoury or ripe and sweet. Discover why this East African staple deserves a spot in your kitchen.

Details

Also known as: Matooke, Amatooke, Ekitookye & Mandizi

Origin: Uganda

Preparation: After steaming, the Matoke are mashed and eaten with savoury meals. They are also used to make a breakfast dish in Uganda and sometimes cooked together with meat and fish. Matoke can also be eaten fresh out of hand, once left to ripen.

Usage: To best enjoy the flavour, simply eat fresh out of hand. Red dacca bananas can also be used in food and drinks recipes as you would other banana varieties.

Storage: Carefully peel and place in water to stop browning. Cook, usually by steaming. It is recommended to cover the knife for peeling, and your hands, in oil to prevent the natural latex from the Matoke to stick to your hands.
