Mangosteen and lime sorbet
Mangosteen is known as the ‘Queen of Fruits’, and is prized for its pleasing balance of sweetness and tanginess. The lime brings an extra dimension of flavour to this classic sorbet recipe. To make, cut two or three mangosteens in half and scoop out the white flesh. Blend with the juice of half a lime, a teaspoon of agave syrup, and a handful of fresh mint leaves.
If you want a creamier texture, you could add some coconut milk. Freeze in a shallow dish, stirring every 30 minutes until set. Serve in chilled bowls topped with grated lime zest.
Snake Fruit & Coconut Mojito Mocktail
